Last night, it was finally cool enough to think about turning on the oven. Justin and I were dreaming of baked goods, but it was also getting late. I opted to try a healthy cookie recipe instead of baking up a storm. I found this recipe from Oh She Glows, and it rawked!

I did not have walnuts or cashews, but it was very easy to adapt her recipe with different nuts. A few months ago, I definitely would not have had coconut oil or agave nectar on hand, but 80% of my pantry is currently stocked with items Angela has recommended. I have fallen head over heels for so many of her recipes lately.
Crunchy Cookie Balls
Grind together:
-1 cup oats
-1/2 cup almonds
-1/4 cup peanuts
-1/4 sunflower seeds
-2 tbs shredded coconut
-1 cup oats
-1/2 cup almonds

-2 tbs shredded coconut
Mix together in large bowl, with:
- 1/4 cup agave nectar
- 1/4 cup coconut oil*
- 2 tsp vanilla
- 1 tbs cocoa powder
- 2 tbs cacao nibs
No hand mixers or heavy machinery required for this batch. After 10 minutes in the freezer, I gained a little more patience and the cookies were ready. They can also be dipped, dunked, dusted, but not dodged because they are DELICIOUS!
